I'm obsessed with this recipe!
It is very similar to the vegan cacao avocado ice cream I like to make, but the chocolate coating makes them even better!
Reasons why I'm OBSESSED:
Simply said, it is indulgent without the guilt. No dairy means no digestive upset, no refined sugar, no processed crap, tons of vitamins and minerals, and full of superfoods!

VEGAN FUDGESICLE
Yield: makes 10 popsicles
Ingredients:
16 oz. coconut milk (or almond milk to reduce the fat and richness)
1 avocado
2/3 cup cacao powder (not cocoa powder)
1/3 cup maple syrup
3 T. cacao nibs
1/4 tsp. cinnamon
1/2 tsp vanilla paste or vanilla extract
1/2 tsp. Salt
Directions:
Place all ingredients into a Vitamix or high speed blender until smooth.
Pour into popsicle molds (I like these - https://amzn.to/2MHXQ5K )
Freeze overnight, or until solid.
Chocolate Coating:
3/4 cup of vegan chocolate
1 T coconut oil
Garnish:
Cacao Nibs
Maldon Sea Salt
Coconut Shreds (optional)
Sliced almonds (options)
Directions:
Melt together the coconut oil and vegan chocolate
Dip frozen sickle in half way, while wet sprinkle lightly with cocoa nibs and maldon salt
Allow the chocolate coating to dry slightly then place on wax paper
Continue with the remaining frozen popsicles.
If you swap the coconut milk for almond milk you can still get plenty of benefits without the extra creaminess and fat content. You can also add protein powder if you want to use this as a post workout treat! The options are endless!
